Mothers Day Fresh Salads
Baked peppers
200g green peppers
20 g onion
10 g parsley
Salt
10 ml olive oil
5 ml vinaigrette
Bake the pepper and peal them. Cut them into circles and place in a plate. Cut the onion on small pieces and add over together with the parsley. Mix with olive oil and lemon juice and you can serve it.
Potatoes with Mushrooms
100 g mushrooms
100 g potatoes
50 g cabbage
1 tomato
10 ml wine
10 ml olive oil
5 g parsley
Salt
Boil the mushrooms and the potatoes and cut them on long lines. The cabbage too. Then separately mix the wine, olive oil and salt and parsley and serve as dressing.
Mixed salad
2 tomatoes
2 green peppers
1 cucumber
1 onion
10 g parsley
10 g olive oil
Salt
lemon juice
Wash and cut into circles the tomatoes, cucumbers, onion and peppers. You can prepare the salad with fresh peppers or if you want you can first bake and peal them. In a large mixing bawl mix the vegetables with olive oil, parsley. Before serving add the lemon juice. It is up to you to serve with Greek style cheese.
Kiopolo salad
200 g aubergine
50 g peppers
20 g onion
1 tomato
10ml olive oil
10 g parsley
5 g garlic
10 g salt
Vinaigrette
Bake the aubergine and the peppers. Peal them and smash them. Add the smash garlic, mixed with the olive oil. Then cut the tomatoes and add them too. With an electric mixer smash all the vegetable in a large mixing bowl. Separately mix salt, vinaigrette and parsley. When ready add it to the vegetables. If you want you can serve it with boiled eggs.
Salad with boiled eggs
2 eggs
Salt
10 ml olive oil
5 ml vinaigrette
Black pepper
Parsley
Boil the eggs for 10 minutes. Cut them into circles. Place them in a plate and decorate on the top with parsley, black pepper. Separately prepare the souse form vinaigrette and olive oil.
