Mothers Day Pies

Mothers day pie
1 cup sugar
2 spoons flourpies
3 eggs
1/3 teaspoon salt
1 cup shred coconut
6 spoons butter
100 g milk
1teaspoon vanilla extract

Melt the butter. In a large bowl mix the flour, sugar and salt and stir melted butter and vanilla extract. Bead the eggs and add to the mixture. Then add milk and coconut. When ready pour into a baking plate and bake in preheated oven for 40 minutes. Leave the pie to cool and serve it.

Walnut Mousse Pie
3 Eggs
1/8 teaspoon Salt
1 c Walnut meats
3/4 c Maple syrup
2 tablespoons Semi-sweet chocolate
2 c Kool whip, divided
1 Chocolate crumb pie shell
Beat very well the egg yolks until get lemon colored then add salt and maple syrup. Cook this mixture in top of double boiler until it thickens and leave it for 15 minutes to cool. Beat the eggs white and combine the maple mixture with eggs white and 2/3 of the Kool Whip. Fold 3/4 cup of nut meats and scrape into a baked pie shall. Then cover with the topping. Sprinkle over the rest of the nuts and the chocolate. You have to freeze the pie for at least five hours.

Potato Pie
4 Sweet medium sized potatoes
1/2 c All-purpose flour
1 c Sugar
1 Egg
1/2 c Butter
Whipped cream
3/4 tsp almond extract
First you have to peel, cook and then mash the potatoes. Then combine in a large mixing bowl flour, butter, sugar, eggs and almond extract and beat with electric mixer at medium speed until the mixture is well blended. Spoon the mixture into a pie plate and bake in preheated oven for 20 - 25 minutes. You can serve the pie warm or cool with whipped cream.

Lime pie
1/3 cup Lime juice
150 ml chocolate milk
3 egg yolks
2 tablespoons powdered sugar
1 1/2 teaspoons rum
1/2 cup whipped cream
5 drops food color
1 graham cracker crust
Add the lime juice o the chocolate milk. Separately beat the egg yolks and add the rum and food color. Pour the mixture into a pie shall. Mix the whipped cream with powdered sugar and rum and spread over the pie. Chill the pie for at least 5 hours and then serve it.
